Super Crunchy Vegan Granola

Ingredients

  • 2 cups rolled oats
  • 3/4 cup almonds
  • 1/2 cup pistachios
  • 1/2 cup coconut flakes
  • 1/4 cup chopped dates
  • 1 tbsp brown sugar
  • pinch of salt
  • 3 tbsp coconut oil
  • 1/4 cup maple syrup

Optional

  • 1 tsp vanilla
  • 2 tsp cinnamon

Instructions

  • Combine all dry ingredients in a large mixing bowl.
  • Melt coconut oil on stove or in microwave. Whisk in maple syrup and vanilla if using.
  • Pour wet mixture over dry mixture and mix thoroughly.
  • Press mixture into a baking pan, then bake at 160C for 20-25 minutes.
  • Allow to cool completely before breaking into small chunks. Store in an airtight container.
