Filling
450gextra firm tofushredded
1/4cupsoy sauce
1stalkcelerysliced into quarters lengthways, then finely diced
1/4red onionvery finely diced
1/2cupwalnutsroughly chopped
1.5tbspdillfinely chopped
3tbspdill picklesfinely chopped
Sauce
2/3cupmayonnaiseplant-based
2tspdijon mustard
1tbsplemon juice
1/2tspgarlic powder
1/2tspsalt
pepper to taste
Sandwich
12sliceswhite sandwich bread
margarine or butterplant-based
Instructions
Shred tofu using a vegetable grater. Heat a lug of olive oil in medium frypan over medium heat, then add tofu and soy sauce. Pan fry until lightly golden, around 5-10 minutes. Transfer tofu to a plate to cool.
In a small bowl, combine sauce ingredients.
Prepare all remaining filling ingredients, then in a large mixing bowl, combine these with the cooled tofu.
Pour the sauce over the tofu filling mixture and stir to combine.
Butter slices of bread, fill and serve immediately.
