Spiced Chia Porridge with Blueberry Compote (Vegan)
This mildly spiced, warming chia porridge with blueberry chia compote is loaded with antioxidants, healthy fats, fibre and omega 3s for a balanced start to the day.
250gpunnet of fresh strawberriescaps removed, quartered
1/2cupcoconut yoghurtor plant-based yoghurt of choice
maple syrup
Instructions
Blueberry Chia Compote
Add blueberries and water to medium size microwave safe bowl. Microwave on high for 3 minutes and stir. Continue heating for 1 minute at a time until the mixture is steaming hot and blueberries have started to break down.
Add chia seeds to the bowl and stir well. Leave to sit for 5-10 minutes until the mixture has thickened.
Spiced Chia Porridge
Combine oats, chia, spices and protein powder (optional) in a small saucepan and mix to combine. Add milk, vanilla extract and maple syrup, then heat on medium until porridge starts to bubble.
Reduce heat to low and simmer for 5 minutes. Add extra milk if needed to keep the consistency smooth.
Serve the porridge into bowls, top with blueberry compote, fresh strawberries, yoghurt and extra maple syrup if desired.
