Garlic Confit

This simple yet flavour packed accompaniment is incredibly easy to make and can be used in a variety of dishes to add a satisfying garlic hit!

  • 5 heads of garlic
  • 1.5 cups olive oil extra virgin
  • 1 tbsp black peppercorns
  • 4 sprigs fresh thyme


  • Peel all garlic cloves.
  • Add all ingredients to a heavy based pot or dutch oven. Heat on low for 20-30 minutes until garlic is tender and is just starting to turn golden.
  • Allow mixture to cool then transfer into a sterilised glass jar. Keep in the fridge for up to a week.
  • This garlic is a delicious addition to any savoury meal that would normally use garlic - its creamy texture and caramelised flavour is great with pasta, mashed potatoes, risotto or even just spread onto toasted sourdough bread.
