- 5 heads of garlic
- 1.5 cups olive oil extra virgin
- 1 tbsp black peppercorns
- 4 sprigs fresh thyme
- Peel all garlic cloves.
- Add all ingredients to a heavy based pot or dutch oven. Heat on low for 20-30 minutes until garlic is tender and is just starting to turn golden.
- Allow mixture to cool then transfer into a sterilised glass jar. Keep in the fridge for up to a week.
- This garlic is a delicious addition to any savoury meal that would normally use garlic - its creamy texture and caramelised flavour is great with pasta, mashed potatoes, risotto or even just spread onto toasted sourdough bread.
